400 grams MONTEREY BEEF BRISKET, whole
1/4 kg fish bones
4 cups light soy sauce
2 tbsp five spice powder
1?2 cup chili garlic sauce
200 grams vegetable trimmings
7 (28 cups) L water
3-1?2 cups ramen noodle, blanched
1 cup bamboo shoots, blanched
1-1?4 cups fish cakes
4 pc MAGNOLIA BROWN EGGS, boiled then sliced
1 cup bean sprouts
sliced green onions for garnish


1.       In a medium-sized sauce pot with hot water, add first 8 ingredients. Boil for 6 hours.

2.       After 6 hours, set aside cooked beef and strain braising liquid. Discard strained solids.

3.        Sliced cooked brisket and set aside.

4.       In a serving bowl, put 80 grams of ramen, then top with 20 grams of bamboo shoots, 35 grams fish cakes, sliced beef brisket, sliced egg and bean sprouts. Pour some hot broth and garnish with green onions. Serve.
