Humba

Ingredients
1 | pc | MONTEREY PORK PATA, cut into serving pieces |
1/2 | cup | vinegar |
2 | cups | water |
1 | tbsp | minced garlic |
2 | tbsp | brown sugar |
10 | pc | peppercorns, crushed |
1/4 | cup | soy sauce |
1 | pc | bay leaf |
2 | tbsp | black beans |
iodized fine salt | ||
banana blossoms (optional) |
Procedure
- Place the pata into the pot. Add vinegar, 2 cups water, garlic, sugar, peppercorns, soy sauce, bay leaf and black beans.
- Boil mixture until pata is very tender. Season with salt, if desired. Add banana blossoms.
Makes 6 servings.
