1 pc MONTEREY PORK PATA, cut into serving pieces
1/2 cup vinegar
2 cups water
1 tbsp minced garlic
2 tbsp brown sugar
10 pc peppercorns, crushed
1/4 cup soy sauce
1 pc bay leaf
2 tbsp black beans
iodized fine salt
banana blossoms (optional)


  1. Place the pata into the pot.  Add vinegar, 2 cups water, garlic, sugar, peppercorns, soy sauce, bay leaf and black beans. 
  2. Boil mixture until pata is very tender.  Season with salt, if desired.  Add banana blossoms.

Makes 6 servings.
